Manuel Choqque researches and experiments with native potatoes and tubers to produce wild colored varieties while seeking to improve their nutritional composition. He receives us in his home in Chinchero, where he provides a sensory exploration through a tasting menu showcasing these magnificent potatoes and other local ingredients. The pairing is completed with wines and vodka also made with tubers like oca and mashwa. A true feast.
